Summer Squash Pizza

Summer Squash Pizza
Caramelized squash and onions paired with goat cheese and a summer savory blend create a delicious sweet and savory pizza.

Ingredients

Pizza

2 Whole Wheat Naan Bread
1 Tablespoon Garlic Infused Extra-Virgin Olive Oil
Pinch of crushed red pepper
Freshly ground black pepper
1 teaspoon chopped summer savory (recipe follows)
1/2 small onion, thinly sliced
1 medium summer squash, thinly sliced
1/4 cup shredded fat-free mozzarella
2 ounces fresh goat cheese, crumbled
2 tablespoons chopped toasted walnuts

Summer savory spice   

2 tablespoons ground ginger 
3 tablespoons dried oregano
1 tablespoon ground cloves 
4 tablespoons onion powder
2 teaspoons ground cinnamon
1⁄2 teaspoon chili powder 
1 1⁄2-2 teaspoons nutmeg
2 tablespoons dried sage, finely crushed   
1 teaspoon dried thyme, finely crushed    
1 teaspoon cumin
1 teaspoon coriander
1 teaspoon sea salt (optional)    
1⁄2 teaspoon black pepper, finely ground(optional)

*this will make more spice than needed for the recipe. Extra can be used for omelets, soup, fish or chicken

Directions

Preheat oven to 350. 

Caramelize sliced onion for 20-30 min, stirring every 5-8 min. Roast sliced squash in oven until slightly brown, 10 min. Brush naan bread with garlic infused oil. Sprinkle with crushed red pepper, black pepper, and summer savory. Scatter caramelized onion and roasted squash. Top with mozzarella, goat cheese, and walnuts. Bake 8-10 min.*

**Oven temperatures and times may vary depending on oven
Recipe serving size is 1 naan bread. Serving can be reduced to 1/2 naan bread and compliment with a tossed side salad
