3 teaspoons Mrs. Dash Southwest Chipotle seasoning
4 (4 ounce) boneless, skinless chicken breasts
1 tablespoon canola oil
1 (15 ounce) can black beans
1 cup frozen corn
½ cup Tostitos chunky salsa
¼ cup reduced fat shredded Mexican cheese
Rub Mrs. Dash seasoning on both sides of the chicken. Heat oil in a large nonstick skillet. Cook chicken in oil over medium heat for 4-6 minutes each side, or until the juices run clear. Transfer chicken to a plate.
Rinse and drain the beans. Add beans, corn, and salsa to the pan and cook about 3-4 minutes. Sprinkle one tablespoon cheese on the chicken and allow it to melt. If it does not melt you can microwave the chicken with the cheese on it for 15-30 seconds.
Serve ½ cup of the bean mixture with 4 ounces chicken.
